			<content:encoded><![CDATA[<p>We have started off the new year with a bang! Well, not really. More like with Waffles and french vanilla cupcakes with cream cheese icing. mmmm mmmm good. Andy and I made the cupcakes yesterday for New Years Eve. We brought them with us in a party carrier to Toni&#8217;s house for food and games (Catch Phrase and Things, to be specific). I thought maybe everyone would have 2, but alas everyone brought quite a bit of food, so some of them came back home with us.</p>

<p>The Waffles were made today. They were supposed to be for breakfast, but we both slept in and instead made them after breakfast. My family got a waffle maker for christmas this year and&#8230;</p>

<p>I had been eager to use it for the first time. I couldn&#8217;t leave for Ottawa before giving it a shot.  Along the waffle-making way, I modified the recipe by adding a splash of Vanilla Extract and several pinches of Cinnamon. Andy and I agreed, that next time, more cinnamon should be added. It is quite a subtle flavour. Maybe we could add apples in the future too! mmmm. apple cinnamon. I can dream for another day of great breakfast.</p>

<p>After finishing the last of the batter, Andrew and I enjoyed a waffle after breakfast dessert. We topped them with Maple Syrup, Freshly cut strawberries and cantaloupe and french vanilla ice cream.</p>

With raisins, bread, eggs, and cinnamon as the main ingredients I find it hard not to love. This love of bread pudding may also come from my childhood when my aunt would come visit and she&#8217;d always be nice enough to make bread pudding.</p>

<p>Thanks Aunt Doey for making me love you through cooking, I plan to do the same with Rach. I hope it&#8217;s working and she clicks to read more and make it herself.<span id="more-175"></span>Ingredients:</p>
<ul>
<li>5 slices day old bread</li>
<li>2 tablespoons sugar</li>
<li>1 tablespoon cinnamon</li>
<li>1/2 cup seedless raisin</li>
<li>3 eggs</li>
<li>2 cups milk</li>
<li>a splash of vanilla extract</li>
</ul>
<p>Instructions:</p>
<ol>
<li>grease the pan with margarine (the pan is about a hand long x a hand wide x 2 inches tall)</li>
<li>break bread into small pieces and make a bottom layer, sprinkle 1/3 your cinnamon on top, and 1/3 raisins.</li>
<li>repeat until you run out of bread, cinnamon, and raisins. (I made 3 layers)</li>
<li>mix eggs in a mixing bowl, then add the milk vanilla and sugar and mix again.</li>
<li>push the bread in the pan down a bit so the top has an evenish surface.</li>
<li>drizzle this mixture on top of the bread in the pan evenly with a zig zag pattern.</li>
</ol>
<p>Baking:</p>
<ul>
<li>put it in the oven at 350 F for 1 hour.</li>
<li>I needed 1 mixing bowl. 1 pan. a small square of wax paper to spread the margarine and not get my fingers greasy. 1 spoon to help he spread the cinnamon.  and 1 wisk. if you do it with less tools you have to clean you win! (hint try using the spoon to mix)</li>

Peppermint patties are yummy in general. But these ones turned out a tad bit too rich, in my opinion.
Perhaps the dough could use a bit of chilling, it&#8217;s very hard to work with warm, even though some recipes recommended against it. Also, there was a bit too much peppermint this time.

<p>Ingredients for Banana bread with raisins (topped with shredded coconut)</p>
<p>3/4 cup brown sugar<br />
1/2 salad oil<br />
2 eggs<br />
1/2 tsp. almond extract<br />
1/2 tsp. vanilla extract<br />
1/2 raisins<br />
1/2 tsp. baking powder<br />
1      tsp. baking soda<br />
2 cup flour<br />
a sprinkle of shredded coconut</p>
<p>I mixed everything above and then I slowly added the flour while mixing, then I poured it in the pan and sprinkled coconut on top. Make sure to grease the pan with butter or margarine for easy cutting and serving.<br />
Cook for 50-55 minutes on 350, until toothpick comes out clean but moist.</p>
