Homemade Oreos

Chocolate Cookies

  • little more than half a cup flour
  • 1/4 cup cocoa
  • 1/2 tsp baking soda
  • 1/8 tsp – baking powder, salt
  • 1/2 cup sugar
  • 1/4 + 1 tbsp butter
  • 1 large egg

Vanilla Filling

  • 1/8 cup butter, vegetable shortening
  • 1 cup sugar
  • 1/2 tsp vanilla extract

Ravioli from Scratch

Yes, I admit. I am still documenting my food adventures from the end of January. Our next endeavor involved something we had never tried before. It ended up being harder than it looked, so I left the details for Andrew to master. I am talking about making Ravioli from scratch.

Several weeks before my week off, my mother came across an unopened pasta maker she had won in a contest long ago. Ever since she told me about it I had been dreaming of pasta making.

Paneer in tomato sauce

Next on my ‘To Cook’ list was Paneer in tomato sauce. My mother had wanted to make it, did not end up finding the time to make it, so I took on the challenge.  It was based on a positive recommendation from my Grandma, who avidly requested the recipe in the fall.

mmmm. I cannot get enough of Indian dishes that have sauce, especially with a tomato base. It infuses the dish with such wonderful combination of flavours. It is great to eat alone with roti or with rice. The only downside is perhaps the long list of ingredients you have to go hunting through your kitchen cupboards for  and the mess you have to clean up afterwards. See below.

However, there is no doubt in my mind, that Indian food is 100% worth the mess.

Bread Pudding

I made bread pudding again this week and took some pictures, this time I filled my container all the way to the top so I would get more per serving. With raisins, bread, eggs, and cinnamon as the main ingredients I find it hard not to love. This love of bread pudding may also come from my childhood when my aunt would come visit and she’d always be nice enough to make bread pudding.
